These strains and yeasts deftly metabolize the inherent sugars in fruit juice or coconut water, yielding a sparkling beverage teeming with probiotics.

The duration of fermentation for the initial batch varies, usually taking 3 to 5 days to achieve your desired level of effervescence, contingent on the temperature within your home. A portion of the resulting concoction can be employed as a starter for subsequent batches. These subsequent fermentations occur expeditiously, typically within 1 to 2 days.

Once you have made a batch, it can then be used for making your next batch; you do not have to use the starter again unless you need to revitalise the kefir. For best results, reculture within one week.
